Cerro Del Toro, Singular Fósiles de Mar 2020
Bodega Cerro del Toro, owned by the Japanese Kambara family, is a Uruguayan wine project that was founded in 2016 with the aim of producing high-quality wines in a privileged location on the coast of Maldonado. It is located in Piriápolis, nestled between the Cerro del Toro hills (an ancient seabed) and 2km from the Atlantic ocean; where the roots explore rocky soils and the grapes ripen in the fresh sea breeze. Singular Fósiles de Mar 2020 is made from 100% Chardonnay and is the estate's flagship wine. Taken from a cold, single, south-east facing plot of calcareous soil, the grapes get the absolute best of what this Atlantic site can offer. Hand-harvested and aged for 6 months on lees in old oak, it has nuanced baking spice aromas, lemon curd, a drizzle of honey and a chalky, mouth-watering finish. An absolute belter; and with only 1,161 bottles made, a rare one too.
